Recent Development of Microwave Power Uses in the Food Processing Industry and Adopt Measures of Development at Home

  • 摘要: 本文通过介绍国内外在食品加工中微波能应用与发展动态,评述了微波能在食品加工中应用的优点与潜在前景,并指出我国发展该项应用技术需采取的对策。
    Abstract: This paper described uses of microwave energy for such varied processes as dehydration, baking, pasteurization , thawing and so on.Microwave heating methods have some distinctive advantages in industrial food processing as compared with conventional conduction heating methods, in terms of their potential for rapid and uniform heating, The paper reviewed much of the information on the food processing industry in China and their uses of microwave energy.The author suggested that professional factories should be set up to develop new processing methods and equipment, and to train related technician.
