Abstract:
This paper described uses of microwave energy for such varied processes as dehydration, baking, pasteurization , thawing and so on.Microwave heating methods have some distinctive advantages in industrial food processing as compared with conventional conduction heating methods, in terms of their potential for rapid and uniform heating, The paper reviewed much of the information on the food processing industry in China and their uses of microwave energy.The author suggested that professional factories should be set up to develop new processing methods and equipment, and to train related technician.
