醋糟对平菇营养价值影响的研究

    Study on the Comprehensive Assessment of the Nutritive Value of Pleurotus Ostreatus Growing in Vinegar Waste

    • 摘要: 应用模糊综合评判方法,对醋糟平菇子实体蛋白质含量等十类营养成分进行了综合分析。结果表明,醋糟栽培平菇不仅具有产量高,成本低,原料来源广,变废为宝等特点,而且其菇体营养价值与棉籽壳菇体非常接近。这一结论,为进一步推广醋糟栽培平菇这一新技术提供了科学依据,也可作为食用菌领域类似研究的参考。

       

      Abstract: In this paper, pleurotus ostreatus cultivated in cotton seed shell is used as a contrast. The nutritive value of pleurotus ostreatus growing in the vinegar waste was evaluated by means of the fuzzy comprehensive assessment. The results indicate that using vinegar waste as a substitute for cotton seed shell to cultivate pleurotus ostreatus not only have the pecularities of lower cost, richer resources but also does not reduce the nutritive value of pleurotus ostreatus. The result provide the scientific bassis for the new technique of using vinegar waste to cultivate pleurotus ostreatus, at the same time, it can also be taken as reference of similar study in the Edible Fungi area.
