土豆干燥过程中内部传热传质的实验研究

    Experiment and Study on the Heat and Mass Transfer in Potato During Drying

    • 摘要: 该文分别采用γ射线穿透法和切片法测量了平板状土豆内部的水分分布,为物料内部水分分布的实验验证提供了实验基础。通过不同形状,不同尺寸的土豆在不同温度下干燥的收缩实验发现,干燥过程中物料的收缩与水分呈线性关系。最后通过模拟结果与实际干燥曲线拟合的方法建立了土豆内部水分扩散系数的数学模型

       

      Abstract: The γ rays transmission and slicing method were used to measure the moisture profile in slab shaped potato. The shrinkage of the potato at different temperatures was studied through experiments. The moisture diffusion coefficients were obtained by minimizing the sum of squared deviations between the predicted and observed drying curves of the cylinder shaped potato. The results of the moisture diffusion coefficients are in a good agreement with other sources.
