Abstract:
Electrostatic coating on food surface is an important method in food preserving freshness and nutrition strengthening. Based on research on available electrostatic spray painting equipment, grid electrode used as high voltage electrode for electrostatic coating on food surface. In order to strengthen corona effect, arista electrode used as substitute for grid electrode was presented. Electrode experiment equipment was developed, and electrostatic spraying charge mass ratio measurer was developed. Taking water, CMC aqueous solution and sodium alginic acid aqueous three fog flows as coating material, corona current experiment and charge mass ratio experiment were conducted to grid electrode and arista electrode separately. With corona current experiment the constructions and voltage of two electrodes were optimized. The charge mass ratio experiment showed that the corona effect of arista electrode was better than that of grid electrode.
