双螺杆挤压加工玉米面膨化食品的工艺和配方研究

摘要: 研究了采用BC45型双螺杆挤压机加工玉米食品的工艺和配方。通过口感评价和膨化度等对比,得出了较优的工艺参数和食品配方,即工艺参数:螺杆转速150 r/min,模头温度160℃,供料量30 kg/h;食品配方:玉米面69.6%,大米粉17.4%,盐1%,糖4%,水8% 。Abstract: The cooking extrusion conditions and formula of corn snack produced by BC45 co-rotating twin screw extruder were discussed in this paper. It is found that the corn snack with high quality can be produced on the following conditions: 160℃ of the die temperature, 150 r/min of screw rotation speed, 30 kg/h of feed rate and at the formula of 8% of water ,69.6% of corn powder,17.4% of rice powder, 4% of sugar and 1% of salt.
