Abstract:
In this paper the present situation of rice drying technology and rice drying equipment is presented. The characteristics of most widely used rice dryers are described. Special emphasis is put on the fissuring of rice kernels during drying. Lower temperature, higher airflow rate and tempering after drying are the main features of rice drying. Some factors affecting the quality of paddy rice such as drying rate, tempering time and measurement of fissured rice kernels are discussed. Some suggestion and recommendations for further development of rice drying are given.
