Abstract:
A two-step process using ethanol and supercritical carbon dioxide(SC-CO
2) to extract phospholipids from egg yolk was developed. The processing parameters on the separating effects were investigated. Experimental results show: at the ethanol extracting stage, ethanol concentration is the major factor affecting the extracting rate of total yolk lipids, temperature is the major factor affecting the extracting rate of phospholipids. At the SC-CO
2 extracting stage, the solubility of phospholipids increases with temperature, and the solubility of neutral lipids reaches the highest at 55℃. The two-step process has good separating effect, phospholipids is of high yield(17.66%) and high purity (94.41%), and the yolk protein has little denaturation.
