Abstract: In this paper, a testboard for the pressure-difference pre-cooling of tomatoes in cartons was established. The central temperature of tomatoes was measured. The pre-cooling time of tomatoes was discussed under the influence of different wind velocities, wind temperature, bore diameter and different arrangement of tomatoes. The test results showed the characteristics of the pressure-difference pre-cooling of tomatoes in cartons，which provides theoretical basis for design of tomato pressure-difference precooling system.
