果蔬边界收缩方程的探讨
Preliminary Study on the Shrinkage Equation of Boundary of Spheral Fruits and Vegetables

摘要: 采用实验研究的方法,获得了小块果蔬体积收缩率与它的含水率变化之间的关系,并将这一关系应用于果蔬内部每一质点,推导建立了球形果蔬边界的收缩方程,为进一步通过数值模拟来研究干燥过程中果蔬的形状变化提供参考Abstract: In this paper, the relationship between the shrinking rate of the volume of a piece of fruit and its water content is obtained through experimentation. This relationship was applied to each interior elementary particle of fruit, sequentially the shrinkage equation of fruit with round boundary was established. The shrinkage equation can provide some references for further study of shape variations of spheral fruits and vegetables in the process of drying by using numeric simulation.
