Abstract:
In order to improve the quality of dehydrated salted rabbit, a small modified atmospheric dryer developed by the authors was used to conduct the experiment for processing salted rabbit, in which N
2, CO
2 and a mixture of 50% N
2 and 50% CO
2 were used as drying media to replace partial air. An orthogonal experiment was carried out to study different influence factors. The effect of Controlled Atmophere Drying(CAD) on the quality of salted habbit was analyzed. The study covers the peroxidase value, acid value under different drying conditions and optimization of processing parameters. The results showed that peroxidase value and acid value of dehydrated salted rabbit were decreased with decreasing O
2 content in the drying media. Quality of dehydrated salted rabbit with N
2 as medium was better than that with CO
2 and the mixture of N
2 and CO
2. A regression analysis of rabbit by CAD with N
2 as medium was carried out and a mathmatical model was obtained.
