Abstract:
This study details the microencapsulation of walnut oil extracted by using a supercritical CO
2 technique by molecule complexation, emulsification and an agglomeration method for avoiding oxidation to broaden the use of walnut oil. Its objective was to find out the optimum processing technological conditions of the product. Soy protein isolation (SPI), maltodextrin, β-cyclodextrin, gum yanthan or glutin and gum yanthan were selected as wall-material, and were dried by means of spray-drying technology. Good quality and high retention ratio microencapsulation of walnut oil was produced. The optimum technological parameters of microencapsulation of walnut oil by spray-drying were as follows: feed concentration was 20%~30%, feed temperature was 50~60℃, inlet temperature was 160~180℃, and outlet temperature was 70~80℃.
