核桃油微胶囊化工艺的研究

    Technology of walnut oil microencapsulation

    • 摘要: 为了防止核桃油的氧化,扩大核桃油的用途,用分子络合、乳化包埋、复凝聚等方法对超临界CO2流体萃取的核桃油进行了微胶囊化研究,以确定产品的最佳生产工艺条件。试验结果表明:采用喷雾干燥法,以大豆分离蛋白和麦芽糊精、β-环状糊精和阿拉伯胶、明胶和阿拉伯胶为壁材,均可制得高质量高包埋率的核桃油微胶囊产品;喷雾干燥法制备核桃油微胶囊适宜的工艺参数为:进料浓度20%~30%,进料温度50~60℃,进风温度160~180℃,出风温度70~80℃。

       

      Abstract: This study details the microencapsulation of walnut oil extracted by using a supercritical CO2 technique by molecule complexation, emulsification and an agglomeration method for avoiding oxidation to broaden the use of walnut oil. Its objective was to find out the optimum processing technological conditions of the product. Soy protein isolation (SPI), maltodextrin, β-cyclodextrin, gum yanthan or glutin and gum yanthan were selected as wall-material, and were dried by means of spray-drying technology. Good quality and high retention ratio microencapsulation of walnut oil was produced. The optimum technological parameters of microencapsulation of walnut oil by spray-drying were as follows: feed concentration was 20%~30%, feed temperature was 50~60℃, inlet temperature was 160~180℃, and outlet temperature was 70~80℃.
