关于肌肉嫩度评价方法的比较研究

    Comparative study on muscle tenderness evaluating methods

    • 摘要: 肌肉嫩度是评价肌肉食用品质的一项重要指标。但如何合理、公正地评价肌肉嫩度是科研人员一直在探讨研究的课题。利用作者自行研制开发的智能型肌肉嫩度计对动物肌肉进行了大量的测试,发现肌肉嫩度的测试不仅仅需要一台精度高、可靠性好的测试仪器,还有许多的不确定因素,如肌肉嫩度的测试方法、测试前的处理程序、肌肉的取样、肌肉嫩度评价指标的规定等等,影响到肌肉嫩度的评价指标。该文对这些因素进行了详细的分析,给出了相应的测试数据及试验结论,提出了合理评价肌肉嫩度的指标的建议。为规范肌肉嫩度的测试程序、制定肌肉嫩度测试标准提供了一定的依据。该文建议肌肉嫩度测试前的处理程序应采用统一标准;取样应规范,采用统一的取样器具;测试应采用精度高、可靠性好的测试仪器;嫩度指标应以剪切应力值表示。

       

      Abstract: The muscle tenderness is an important index that is often used to evaluate the quality of the muscle by tasting and eating. But how shall we evaluate the muscle tenderness with reason and equity? Tests were done using the intelligent muscle tenderness meter, which was previously developed by us. It is found that test results depend not only on the precision and reliability of the instrument, but also on some other factors, e.g., assessment methods, the pretreatment, standardized sampling methods, and the assessment index for the muscle tenderness, etc. This paper gave a comprehensive analysis of effects of these factors. The suggestions were proposed on the index of muscle tenderness assessment, which provides the basis for standardizing muscle tenderness testing procedure and setting down the muscle tenderness-testing standard before testing muscle tenderness. We suggest the handling procedure of muscle should be adopted to unify the standard. The sampling of muscle must be standard by using the same kind of tool. When testing, we should adopt high accuracy, dependable test instrument. And the index of tenderness is expressed with shearing strength.
