    Optimization of the technology for aqueous enzymatic extraction of rapeseed oil and protein

    • 摘要: 为提高菜籽蛋白的利用率,采用水相酶解法提取菜籽油与菜籽蛋白,以超滤法分离菜籽蛋白,重点对酶处理的工艺参数进行了研究。试验对各种酶的作用效果进行了比较,确定采用纤维素酶、果胶酶按活力比3∶1配方的复合酶处理效果较好;由优化试验得出酶处理的工艺参数为:固液比1∶5,酶用量30 U/g,酶处理时间100 min;在最佳工艺条件下获得高质量的菜籽油与菜籽蛋白,油与蛋白质得率分别为92.6%、82.3%。

       

      Abstract: In order to fully explore the rapeseed protein resources, aqueous enzymatic extraction method was adopted to extract rapeseed oil and protein and then ultrafiltration technique was used to separate the rapeseed protein. Especially, the optimized technology parameters of enzymatic treatment were studied. After the comparison of the effect of all kinds of enzyme, complex-enzyme(cellulase, pectinase in line with their activity ratio of 3∶1) was selected. With the optimized experiments, the technological parameters of enzymatic treatment were obtained as follows: the ratio of solid to liquid is 1∶5, the quantity of enzyme is 30 U/g, the enzymatic treatment time 100 min. Under this optimized condition, the rapeseed oil and protein with high quality were obtained and the yields of them were 92.6% and 82.3%, respectively.
