    Research advances of aquatic product drying technologies

    • 摘要: 随着人们生活水平的提高,对高品质水产品的需求量显著增加。干燥是水产品加工的重要方法之一,不同的干燥方式对水产品的品质影响很大。在较低温度下进行水产品干燥,能减少营养损失,并能获得良好的风味、外观和口感。冷冻干燥、热泵干燥和微波真空干燥等干燥技术在水产品加工中的应用日益广泛。介绍了水产品传统干燥和新型干燥技术的特点、研究及应用现状和发展趋势。

       

      Abstract: As the improvement of living standards, the need for high quality aquatic products has been greatly increased. Drying is one of the most important methods in aquatic product processing. The quality of dried product depends on the drying method involved. The nutrition, flavor, texture, and appearance of the aquatic product can be largely preserved during drying at lower temperature. Vacuum freeze drying, heat pump drying and microwave vacuum drying technologies have been used increasingly in aquatic product processing in recent years. The development and potential application of the traditional and newly involved drying technologies in aquatic product processing were described and analyzed.
