Abstract:
As the improvement of living standards, the need for high quality aquatic products has been greatly increased. Drying is one of the most important methods in aquatic product processing. The quality of dried product depends on the drying method involved. The nutrition, flavor, texture, and appearance of the aquatic product can be largely preserved during drying at lower temperature. Vacuum freeze drying, heat pump drying and microwave vacuum drying technologies have been used increasingly in aquatic product processing in recent years. The development and potential application of the traditional and newly involved drying technologies in aquatic product processing were described and analyzed.
