    双孢蘑菇护色保鲜技术研究

    Color protection and freshness-keeping technology of Agaricus bisporus during modified atmosphere storage

    • 摘要: 以双孢蘑菇为试验材料,研究不同的褐变抑制剂对双孢蘑菇保鲜效果的影响,通过正交试验筛选出双孢蘑菇MA贮藏中有利于色泽保持的最适褐变抑制剂配比。研究结果表明,对双孢蘑菇贮藏保鲜效果较好的褐变抑制剂及其浓度为:0.1%的无水亚硫酸钠溶液、0.06%~0.10%的抗坏血酸溶液、0.8~2.6 mmol/L的半胱氨酸溶液;保鲜液最佳配比为2 mmol/L半胱氨酸、0.05%抗坏血酸、0.15%无水亚硫酸钠、浸泡时间8 min。

       

      Abstract: With Agaricus bisporus as experiment material, this paper mainly discussed the effect of different chemical fresh-keeping substances on keeping quality of Agaricus bisporus. The optimum proportion of different fresh-keeping substance was obtained through orthogonal experiment. The results show that the best browning inhibitor and concentration for storaged Agaricus bisporus are: 0.1% sodium sulfite, 0.06%~0.10% ascorbic acid and 0.8~2.6 mmol/L cysteine. The best constitute and proportion for fresh-keeping substance are: 12 mmol/L cysteine, 0.05% ascorbic acid, 0.15% sodium sulfite and soak time 8 minutes.
