Abstract:
To understand the changes of fruit and vegetable qualities during storage and distribution, the relationships between tissue structures and biomechanical properties of fruits and vegetables, from a point of view of mechanics, were discussed. The characteristics of mechanical damage to fruits and vegetables during storage and distribution were analyzed, the methods for measuring mechanics and texture properties were introduced, and some problems in the technology at present were summarized. At last, suggestions and directions of research in the future were put forward in this paper.
