Abstract:
Modified atmosphere packaging(MAP) is one important technique that can be used to extend shelf life of fresh fruits and vegetables. The quality of MAP mainly depends on the condition of gas composition, temperature and relative humidity inside the packages. Modeling MAP is crucial to the quality of MAP and design of a successful MAP system. In this paper, theoretical research aspects of MAP were reviewed. The respiration models, main methods of measuring respiration rates, gas exchange models and the changes of temperature and humidity inside the packages were reviewed. The limitations of research were discussed. It provides a reference for further research on MAP of fruits and vegetables.
