Abstract:
The chromatography anthocyanins fingerprints of red wines fromnine grape cultivars were established by high-performance liquid chromatography(HPLC) to identify wine from different cultivars. HPLC analysis:Chromatographic condition was RP-C
18 column, pH 1.6 in mobile phases, binary solvent delivery gradient elution, and UV-Vis detection was used at 518nm.Fingerprint: the relative time and relative area of chromatography peaks were computed, and relative area of chromatography peaks were arranged according to relative time in turn. Correlative coefficient was computed using Cosine method. Hierarchical classification used SPSS11.0 statistical analysis software. The result of research illuminated that there were some differences in anthocyanins HPLC fingerprints of wines from different grape cultivars. The wines from
V. amurensis and hybrid grapes had some chromatography peaks which did not exist in winesfrom
V. vinifera grapes. Correlative coefficients have some differences inwines from different cultivars. The anthocyanins recognition pattern to identifywine from different cultivars was built by hierarchical classification analysis,and wine from different cultivars could be identified using this method. Thefingerprint with hierarchical classification was one of feasible methods for identifying red wines from different grape cultivars.
