Zn、Cu、Pb、Cr、Cd对鲫肌动球蛋白和肌球蛋白加工特性的影响

    Effects of heavy metal ions of Zn, Cu, Pb, Cr, Cd on the processing of actomyosin and myosin of crucian carp

    • 摘要: 为了解重金属离子污染对鱼体质地的影响,通过外源添加不同浓度的Zn(Ⅱ)、Cu(Ⅱ)、Pb(Ⅱ)、Cr(Ⅲ)、Cd(Ⅱ)重金属离子,采用质构仪测定添加不同浓度金属离子对肌动球蛋白和肌球蛋白黏性和凝胶特性的影响。结果表明,肌动球蛋白和肌球蛋白溶液的硬度、稠度、黏度、黏聚性受离子浓度影响,硬度和稠度先下降后升高,黏性和黏聚性先略有升高,而后出现下降的趋势,Zn(Ⅱ)、Cr(Ⅲ)、Cd(Ⅱ)引起的变化显著(p<0.01)。金属离子浓度增加对鱼蛋白凝胶的硬度、黏聚性、胶黏性、咀嚼性有显著影响(p<0.01),降低鱼蛋白食用价值。

       

      Abstract: In order to discuss and know about the effect of heavy metal ions on fish texture, different concentrations of Zn(Ⅱ), Cu(Ⅱ), Pb(Ⅱ), Cr(Ⅲ), Cd(Ⅱ) were added. The effect of concentrations of Zn(Ⅱ), Cu(Ⅱ), Pb(Ⅱ), Cr(Ⅲ), Cd(Ⅱ) on the viscosity and gel properties of actomyosin and myosin was determined by using texture analyzer after addition of heavy metals. Results indicate that the concentration of heavy metals affect hardness, consistency, viscosity and cohesiveness of solution. Hardness and consistency raise after descending, and viscosity and cohesiveness have an opposite trend, especially Zn(Ⅱ), Cr(Ⅲ) and Cd(Ⅱ) with significant effects. Heavy metals have a notable effect on hardeness, cohesiveness, gumminess, chewiness of gel properties, and reduced edible value.
