    Optimization of the technology for peeling hickory kernel by lye

    • 摘要: 对山核桃仁碱液浸泡法去皮工艺进行了研究,在单因素试验的基础上选择氢氧化钠溶液浓度、浸泡温度、浸泡时间为考察因素,以去皮效果为考察指标,并对此指标进行量化,设计得到三因素五水平的二次正交旋转回归组合试验,对用试验中的数据拟合得到的回归方程进行统计检验和分析,获得最佳去皮工艺条件为氢氧化钠溶液浓度0.9%,浸泡温度78℃,浸泡时间3 min。在此试验条件下,去皮效果(分值)的理论极值为96.6分,并在此条件下进行多次验证试验,去皮效果好,极易完全去皮且核桃仁质地良好。

       

      Abstract: The technology of peeling hickory kernel by lye was studied. Based on the single factor experiments, rotation regression orthogonal combination design with three factors and five levels in which concentration of NaOH, soaking temperature and soaking time were chosen as examining factors and peeling effect was chosen as assessment index which was quantitated in order to decrease assessing error in this design was used. Then a regression equation was founded using the data in the design. After the statistical test and analysis of the equation, the optimum condition was found as follows: concentration of NaOH , soaking temperature and soaking time 0.9%, 78℃ and 3min separately. Under this condition, the theoretic extremum of the peeling effect(mark) was 96.6. The results of scale-up experiments showed that hickory kernels were very easy to peel and the quality of kernels was good.
