    脱水刀豆挤压工艺及其对速化复水性能影响的研究

    A Study on Squeezing Technology of Dehydrated Sword Beans and Its Effect on the Recovery Rate

    • 摘要: 利用农业物料力学性质试验台对不同含水率的刀豆进行挤压预处理及干燥后进行复水试验。对挤压力和处理前含水率二因素进行了饱和D-最优设计,得出了其对目标函数(复水比速率)的二次回归方程。在此基础上,进行了优化处理,提出了实用挤压工艺,其复水比速率比不挤压工艺提高1.74~1.83倍。并分析讨论了挤压对复水比速率提高的同时软糊率不高的机理。

       

      Abstract: This paper tells that the squeezing processes on sword beans with different moisture content were taken on the squeezing test-bed, and then recovery tests were carried out after drying. The D-saturating optimization method is used for getting the regression formula. An optimum technology is advanced after analysis. Finally, the influences of squeezing on recovery rate and paste rate are discussed.
