    土豆干燥过程中内部传热传质的数值模拟

    Numerical Study on the Heat and Mass Transfer in Potato During Drying

    • 摘要: 建立了可以预测干燥过程中土豆内部水分分布和温度分布的传热传质模型,模型考虑了干燥过程中的土豆收缩和水分扩散系数的变化。该文推导的内部传热传质模型计算所得的内部水分分布和温度分布与实验结果相近。研究还发现在模型中是否考虑收缩对所得的水分分布和温度分布有较大的影响。

       

      Abstract: The simultaneous heat and mass transfer model was modified to predict the temperature and moisture distribution in potato during drying. The slab shaped and cylinder shaped potato were used in the study. The shrinkage of potato during drying was considered in the program. Comparisons between the predicted and experimental mean moisture content, moisture profile and temperature profile in the sample provided a satisfactory agreement.
