    • 摘要: 研究了软胶囊饮料中几种常用色素的渗透性,并探讨了色素包埋、改变胶囊皮膜组成等抑制色素渗透的方法。结果表明,海藻酸钙皮膜对几种色素的渗透性大小顺序如下:柠檬黄>叶绿素、β-胡萝卜素>番茄红素;柠檬黄经β-环状糊精包埋对其渗透性影响不大;在胶囊壁液中添加环氧氯丙烷或黄原胶对色素的渗透有明显的抑制作用。

       

      Abstract: The permeability of several pigments in the soft capsule beverage was studied in the paper. Some methods which control pigments's permeation were also researched like embedding the pigment and change the composition of the skin liquid. The results showed that the order of the permeability from bigger to smaller is lemon yellow, chlorophyl or β-carotin and lycopene. The effect of lemon yellow emdedding with β-cricoid dextrin on the permeability is not notable,however, the permeation of the pigments can be obviously restrained through adding xanthan gum or epichlorohydrin in the skin liquid.
