Abstract
In this paper,a static gravimetric method was used. Equilibrium moisture content (EMC)for adsorption and des-orption of two varieties jujube were determined at 10~50℃ and all range of relative humidity,and analyse effect relative humidity and temperature on EMC. Modified - Henderson, Chung - Pfost, Modified-Halsey, Modified-Oswin e-quation were compared for their ability to fit experimental results. Comparison are based on relative percentage divia-tion and standard error,and obtained model that describes adsorption and desorption isotherms of jujube.
