Fissure Development of Rice in Moisture-Absorbing Environment: Research Progresses and Applications

Abstract
Low moisture rice grains will be fissured when exposed in moisture - absorbing environment. Fissured rice grains are broken more easily in milling, causing the reduction of head rice yield. Relative humidity changes have much greater effect on rice fissuring than that of temperature of environment. The rice resistance to fissuring is controlled by the physical characteristics and chemical composition of the grains. The demage of low moisture rice caused by moisture absorption would be prevented or alleviated by the improvement of preharvest and postharvest technology, resulting in reduction of the rice breakage in milling and better rice qualities.
