Study On the Nutritional Value of Chrysanthemum

Abstract
We determined the contents of reducing sugar, total sugar, vitamin C, amino acid and mineral elements such as Ca, P, Fe, Cu, Zu, Mn in three varieties of chrysanthemum: Mantianxing (wild chrysanthemum), Hangbaiju (medicated chrysanthemum), Huangjingqiu (cultivated chrysanthemum). The results showed that the contents of vitamin C, reducing sugar, total sugar, amino acid in the Mantianxing (wild chrysanthemum) are 2 mg/100 g F· w and 3 mg/100 g F·w, 2 g/100 g F· wand 3 g/100g F· w, 2 g/100g F· w and 3 g/100Og F·w,1. 255 g/100g F·wand 4. 295 g/100g F· w more than those of Hangbaiju (medicated chrysanthemum) and Huangjingqiu (cultivated chrysanthemum) respectively. The contents of trace elements such as Fe, Zn, Cu, Mn in the Hangbaiju ( medicated chrysanthemum ) are 81. 35 mg/kg F·w and 64. 20 mg/kg F·w;1. 68 mg/kg F· w and 2. 53 mg/kg F· w,2. 96 mg/kg F·w and 1. 56 mg/kg F·w; 3. 13 mg/kg F · w and 5. 07 mg/kg F· w more than those of Mantianxing (wild chrysanthemum) andHuangjingqiu (cultivated chrysanthemum) respectively. While the contents of Ca and P in the Huangjingqiu (cultivated chrysanthemum) are 2. 34 mg/kg F·w and 82. 44 mg/kg F· w; 267. 44 mg/kg F· w and 73. 98 mg/kg F· w more than those of Mantianxing (Wild chrysanthemum) and Hangbaiju (medicated chrysanthemum) respectively.
