Studies on the Manufacture of LowLactose Milk Using Membrane and Enzymatic Technology

An alternative process for the manufacture of lowlactose milk was investigated in this paper. Milk was first subjected to ultrafiltration / diafiltration treatment, the permeateagent was subjected to β－galactosidase treatment and then mixed with the retentionaid again. This process compared favourably with the traditional process with respect to fouling and microbial contamination of the enzyme.
