Abstract
An alternative process for the manufacture of lowlactose milk was investigated in this paper. Milk was first subjected to ultrafiltration / diafiltration treatment, the permeateagent was subjected to β-galactosidase treatment and then mixed with the retentionaid again. This process compared favourably with the traditional process with respect to fouling and microbial contamination of the enzyme.
