Numerical Simulation on Freezing Process of Banana Puree in Plate Contact Freezer

In this paper, the freezing process of banana puree in plate contact freezer was studied by means of numerical simulation and experiment. The fully implicit difference method was employed, and the latent heat release was handled with the increment of frozen water fraction. The results show that the computed temperature checks fairly well with experimental temperature. The information about the transient temperature field and the frozen interface of banana puree in plate contact freezer could be obtained with this procedure.
