    Study on Relationship Between Microstructure of Minced Fish and Its Rheological Properties

    • The rheological properties of minced fish were relative to its microstructure. The relationship between rheological properties of minced fish and its microstructure was seldom discussed before. In this paper, PLS was applied to discuss the relationship between rheological properties of minced fish and its microstructure. The test results showed that the correlation equation was reasonable.
