    Edible Nutritional Value and Application of Fish Bone Meal From Harengula Zunasi B.

    • The edible nutritional value of fish bone meal from Harengula Zunasi B. and its application to corn, chufa, chicken powder and water chestnut were studied in this paper. The results show that the fish bone meal with unique biological function of compensating calcium is a typical high-nutrition and low-caloric content food because of containing 27.0% of protein and 2.0% of fat. The ratio of calcium to phosphorus is 2.32 in the fish bone meal, and calcium and iron are liable to being absorbed and utilized. The fish bone meal contains 24.36 mg/100g of amino acid, 5.23 mg/100g of essential amino acid per 100 g, and the ratio of essential amino acid content to total amino acid content is 21.49%. The fish bone meal, which protein quality is superior to porcine bone meal, has more comprehensive application prospects. The purpose of intensifying protein and element (e.g. calcium, phosphorus and iron), improving proportion of calcium and phosphorus, and raising sensory quality of corn, chufa, chicken powder and water chestnut can be reached through adding 10% fish bone meal into these food.
