    Preliminary Study on the Shrinkage Equation of Boundary of Spheral Fruits and Vegetables

    • In this paper, the relationship between the shrinking rate of the volume of a piece of fruit and its water content is obtained through experimentation. This relationship was applied to each interior elementary particle of fruit, sequentially the shrinkage equation of fruit with round boundary was established. The shrinkage equation can provide some references for further study of shape variations of spheral fruits and vegetables in the process of drying by using numeric simulation.
