Analysis of the factors for producing dehydrated salted rabbit by controlled atmosphere drying and optimization of its processing parameters

Abstract
In order to improve the quality of dehydrated salted rabbit, a small modified atmospheric dryer developed by the authors was used to conduct the experiment for processing salted rabbit, in which N2, CO2 and a mixture of 50% N2 and 50% CO2 were used as drying media to replace partial air. An orthogonal experiment was carried out to study different influence factors. The effect of Controlled Atmophere Drying(CAD) on the quality of salted habbit was analyzed. The study covers the peroxidase value, acid value under different drying conditions and optimization of processing parameters. The results showed that peroxidase value and acid value of dehydrated salted rabbit were decreased with decreasing O2 content in the drying media. Quality of dehydrated salted rabbit with N2 as medium was better than that with CO2 and the mixture of N2 and CO2. A regression analysis of rabbit by CAD with N2 as medium was carried out and a mathmatical model was obtained.
