Abstract
The large yellow croakers were coated with 3% sodium alginate solution and stored in ice. In comparison with the values of sensory assessments and analyses, TVB-N values, total bacteria counts and pH values with the corresponding results of the ordinary ice storing method, the feasibility and effects of coating method were studied, and the results show that it can manage to restrain the growing of bacteria, keep TVB-N values at relatively low levels and then extend fish shelflife.
