    Technology for SC-CO2 extraction of antioxidant components from ginger

    • With the increase of demand of natural antioxidant, research on antioxidative acitivity substances from ginger was done throughly. A new separation technique—Supercritical Carbon Dioxide extraction was adopted to enrich antioxidant components from ginger in the study. The moisture and particle size of ginger were studied as single-factor, and temperature, pressure and time of extracting which influenced abstracted technology were researched respectively through orthogonal experiments, and extracting quantity, change of POV added into fat were studied as an index. The influence of all technical parameters on extracting effect was confirmed. The results showed that the technical parameters(60℃, 24 MPa, 140 min) were adopted and the ginger (moisture: below 10%) was used to obtain more extract with higher antioxidative acitivity.
