Physiological-biochemical changes of winter-jujube during humidicool storage

Abstract
Types of respiration and characteristics of physiological-biochemical changes are some important reference factors in the storage and transportation of fruits. Respiration intensity changes were studied on winter-jujube(Ziziphus jujuba Mill) of different maturity at room temperature and humidicool temperature respectively. In humidicool storage condition, the firmness, soluble pectin content, polygalactouronase (PG) activity, starch content and amylase activity of half-red fruit were measured. Results showed that winter-jujube was not a kind of climacteric fruit. The change of firmness and PG activity showed a significant positive correlation, and there was a significant negative correlation between soluble pectin content and PG activity, the same as starch and amylase activity of winter-jujube.
