Optimization of the technology for aqueous enzymatic extraction of rapeseed oil and protein

Abstract
In order to fully explore the rapeseed protein resources, aqueous enzymatic extraction method was adopted to extract rapeseed oil and protein and then ultrafiltration technique was used to separate the rapeseed protein. Especially, the optimized technology parameters of enzymatic treatment were studied. After the comparison of the effect of all kinds of enzyme, complex-enzyme(cellulase, pectinase in line with their activity ratio of 3∶1) was selected. With the optimized experiments, the technological parameters of enzymatic treatment were obtained as follows: the ratio of solid to liquid is 1∶5, the quantity of enzyme is 30 U/g, the enzymatic treatment time 100 min. Under this optimized condition, the rapeseed oil and protein with high quality were obtained and the yields of them were 92.6% and 82.3%, respectively.
