    Experimental study on spray drying of flaxseed gum

    • The effects of spray drying parameters on moisture content, viscosity, and emulsifying property of flaxseed gum were studied. The spraying rate, air temperature and air flow rate were selected as the experimental factors. The results reveal that all of the above factors do not affect the emulsifying property but affect the moisture content and viscosity significantly. Mathematical models established by orthogonal regression experiment were used to optimize the spray drying process. The optimized process conditions of spraying rate, air temperature and air flow rate are as follows: spraying rate is 690 mL/h, air temperature is 186.5℃ and air flow rate is 95.5 m3/h. Under the optimized conditions, the moisture content of dried gum is 10.89% and the viscosity of dried gum is 74 mPa·s.
