    Optimization of technology for extracting rice bran protein with different enzymes

    • An experimental method based on controlled mixture ratio of different enzymes in order to improve the yield of rice bran protein separation was proposed. The model between rice bran protein separation and mixture ratio with cellulase, proteases and phytase was established. The optimal proportions of enzymes were cellulase 65.84%, proteases 18.52%, phytase 15.64%. The optimum extracting conditions with rice bran protein yield over 86% were obtained by adding 4% of the enzymes, substrate mass ratio to defatting rice bran by dissolving at 20% in water and incubating 2h at 45℃ and pH 5.5.
