Effects of heavy metal ions of Zn, Cu, Pb, Cr, Cd on the processing of actomyosin and myosin of crucian carp

Abstract
In order to discuss and know about the effect of heavy metal ions on fish texture, different concentrations of Zn(Ⅱ), Cu(Ⅱ), Pb(Ⅱ), Cr(Ⅲ), Cd(Ⅱ) were added. The effect of concentrations of Zn(Ⅱ), Cu(Ⅱ), Pb(Ⅱ), Cr(Ⅲ), Cd(Ⅱ) on the viscosity and gel properties of actomyosin and myosin was determined by using texture analyzer after addition of heavy metals. Results indicate that the concentration of heavy metals affect hardness, consistency, viscosity and cohesiveness of solution. Hardness and consistency raise after descending, and viscosity and cohesiveness have an opposite trend, especially Zn(Ⅱ), Cr(Ⅲ) and Cd(Ⅱ) with significant effects. Heavy metals have a notable effect on hardeness, cohesiveness, gumminess, chewiness of gel properties, and reduced edible value.
