    Development of fermentation kinetic models for Lactobacillus acidophilus WS capable of producing bacteriocin

    • Before the industrial production of Lactobacillus acidophilus, it is necessary to establish fermentation kinetic models. Lactobacillus acidophilus WS was inoculated into MRS medium to ferment. Based on the equations of “Logistic equation” and “Luedeking-Piret equation”, the kinetic models reflecting its fermentation features including strain growth model, product formation model and medium consumption model were constructed respectively and were verified by experimental data. The results show that the forecasting values by models agree well with the experimental values. It can be included that these models can well forecast the actual fermentation process.
