Abstract
To quickly predict and monitor the growth of Pseudomonas P-1 causing decay of pork at 0~10℃ isolated from chilling pork, the growth model was developed. The growth condition of Pseudomonas P-1 was simulated at different temperatures using the SAS program. Compared results show that the estimated parameters from Gompertz equation for the assayed results show better predictive ability than that of linear model. Square-root model was applied to simulate and integrate the secondary model of Pseudomonas. The validation of the secondary model was based on culture data, chilling pork data and fluctuate temperature data. The average bias factor and accuracy factor are 0.944 and 1.256 respectively. The research results indicate that the secondary model is valuable for rapid and precise prediction of the growth of Pseudomonas at 0~10℃.
