Abstract
In order to prepare well-dispersing, good fluidity and storability micro-encapsulation of thick pricklyash peel oleoresin. The processing technology for preparing pricklyash peel oleoresin micro-encapsulation by spray-drying was investigated and optimized by single-factor experiments and the orthogonal experiments. The results show that the composition of the proper ratio of wall to material is the 1︰4 ratio of Arabic gum to malt dextrine and the mass ratio of core material to wall material is 1︰6, gum liquid concentration is 30%. The emulsion should be homogenized for twice under the condition of 40 MPa and 40℃. The optimum spray-drying parameters are as follows: the inlet air 9 m3/min, the feed speed 8 mL/min, inlet air temperature 140℃ and outlet air temperature 70℃. Encapsulating rate of micro-encapsulation under the optimized technology is 92% and its quality is good.
