    Effects of dense phase carbon dioxide on sterilization and physical-chemical properties of bovine colostrum

    • Dense Phase Carbon Dioxide (DPCD) sterilization technology is one of the more and more popular non-thermal sterilization technologies. The effect of DPCD (20 MPa, 37℃) on sterilization of bovine colostrum was investigated. The changes of particle size, viscosity, colour and pH value of bovine colostrum were also been discussed. The results indicated that the bacteria in the bovine colostrum could be effectively sterilized by DPCD at 20 MPa and 37℃ for more than 30 min, the bovine colostrum became brighter, and its particle size increased, but its viscosity and pH value decreased.
