    Relationships between anti-shearing force and quality properties of wheat grain

    • The relationships between mechanical properties and quality properties of wheat were researched, which provided a simple and quick method for wheat quality examination. The 17 wheat varieties of Liaoning province were used as materials for researching relationships between mechanical properties and quality properties. The shearing velocity was determined 1 mm/min by the experiment, the anti-shearing forces of different wheat varieties existed remarkable difference, and the anti-shearing force values distributed from 69.14 N to 124.1 N. The experiments showed that there were a significantly positive correlation between the anti-shearing force and the protein content of wheat, and positive correlations between the anti-shearing force and wet gluten content, and between the anti-shearing force and the dry gluten content. However, there were no evident correlations between anti-shearing force and other quality properties of wheat.
